  I make spatzle in a large saute pan -- filled with boiling water, of course. The hopper-style maker is preferable in that circumstance because the pan is wide, and I can rest the end of the thing on the far edge, and make more spatzle, quicker.

  I have owned and used a hopper-style spatzle maker for years and it works great. It is very simple, very quick - fool-proof actually. And it's a snap to clean. Years ago, when I bought mine, I told a friend, who owned and cooked in a big German restaurant, about it. They had been making spatzle some other more laborious way. I bought one for her and she was delighted. After 30 years, I believe they are still using it in their restaurant.

   

  Favorite German-Spaetzle-Dumpling Recipe:

  Ingredients

  1 cup Wheat flour, white, all-purpose, enriched, bleached

  ¼ cup Milk

  2 Egg, whole, raw, fresh

  ½ teaspoon Spices, nutmeg, ground

  1 pinch Spices, pepper, white

  ½ teaspoon Salt, table

  1 gallon Water

  2 tablespoons Butter, with salt

  2 tablespoons Parsley, raw

   

  Directions

  1. Mix together flour, salt, white pepper, and nutmeg.
  2. Beat eggs well, and add alternately with the milk to the dry ingredients. Mix until smooth.
  3. Press dough through spatzle maker into boiling water
  4. Cook 5 to 8 minutes. Drain well.
  5. Saute cooked spatzle in butter or margarine. Sprinkle chopped fresh parsley on top, and serve.
